Oatmeal banana pancakes

  Pancakes are a great treat on weekends or weekdays for us. These are fairly sweet, so you may prefer a fruit topping on them rather than syrup (or like one of my son's says they are great alone) although organic maple syrup is mighty fine on them too.

Dry ingredients
1 cup of white whole wheat (note not white flour)
1/2 teaspoon of salt
2 teaspoons of baking powder
1/4 teaspoon ground nutmeg
1/4 cup quick cooking oats (ground)

Wet ingredients                                                                                                 
1 egg slightly beaten
1 cup of milk of choice
1 tablespoon coconut oil (veg oil just fine)
2 tablespoon pure maple syrup (I use organic)
1 cup of sliced ripe bananas

First sift together dry ingredients in a large bowl. In separate bowl mix wet ingredients. Make a well in the dry ingredients and stir in wet just to combine.

Lightly oil griddle place on med-high heat. Use about 1/4 cup of batter per pancake and cook until bubbles appear on top, about 1 min. The bananas will settle on the bottom, so you want to flip these just as soon as bubbles start to form to avoid burning. Cook on second side until golden brown.



Dress them how you like...kids love when I add a little snow dust on them (organic confection sugar)
