
So I'm on my way back from the DR's appt and a quick stop at the Christmas Tree Shop (do you all have one?....I love that store) with my little sweeties, in which I had a tiff with my oldest. I had been feeling bad over the tiff, and had to be stern and stand my ground on something with him...but even I know I did the right thing it hurt my heart. So driving home the scenic route...I don't like highways. I'm thinking to myself how stinky I'm feeling over it all. Then my son screams "MOm I see a deer" as I drive a little further in order to turn around...I feel a nudge in my heart to look on the ground on the opposite side of the road and there I see pink gold. At least in my eyes. So I finally turn around on this country road pull over and there on the ground my very very favorite flowers peonies. They were just thrown there scattered and just waiting for me to pick them up in the rain and take them home. So here they are in a little vase looking pretty as can be. It might not seem like much to anyone else but knowing how I felt at the moment, and how they are just my favorite flowers in the world...I know it was God reminding me He loves me.
Also I tried a new recipe tonight here is the link...very yummy. I tweaked it just a bit adding cheddar cheese and green beans instead of just swiss, and broccili. Swiss Chicken and Noodles
(Double ingredients if you want a 9x13-sized dish of this.)
Ingredients:
8 ounces egg noodles
2 tablespoons butter
1/2 cup chopped onion
1/2 cup sliced mushrooms
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups chicken broth
1 cups shredded Swiss cheese
2 cups cubed cooked chicken (or turkey)
1 cup cooked chopped broccoli
1 sleeve Ritz crackers, crushed
½ stick melted butter
Preparation:
Cook noodles according to package directions.
In a medium skillet, melt butter over medium low heat; cook onion and mushrooms until tender. Stir in flour, salt and pepper. Stir in broth. Bring to a boil; reduce heat and simmer, stirring constantly, until sauce is thickened. Stir in cheese until melted. Add chicken and broccoli and heat through. Toss with hot noodles; top with buttered bread crumbs. Place under broiler to toast bread crumbs.
