These sandwiches are delish
















Today for lunch I made a very yummy sandwich, I thought I'd share it in case you have the items at home. Just an idea.
Spinach, tomato, bacon, pouched egg, cheese, and mayo on toasted Scali bread. Seriously so good.
P.s how do you like my little daffodils I bought at
Trader Joe's...I thought maybe if I had a little spring in my kitchen then maybe spring would come faster...hey a girl can dream ;0)

So I decided to redecorate my kitchen






Here are a couple of things I bought to redo my kitchen. I eventually want to paint it blue, yellow, and splashes of red. I included a picture of the fabric to make the drapes for the kitchen, I have to for the slider, and the other two windows.

Chicken and dumplings recipe


Here you go Stuce, It's so basic but always delish

I take a whole chicken, place it in the pot with water to really cover the chick and cook all day, until meat falls of the bone, then remove chick (carefully it falls apart with the slightest touch) and debone the chick. Take all the meat back into the pot, season with salt and pepper to taste, and mix in veggies (whatever I have on hand honest....sometimes canned...gasp). Now the dumplings. Well Mike loves the bisquick mix kind which is yummy, but sometimes I like the homemade kind, which here is the recipe. Pour 2 cups in a mixing bowl, leaving a hole in the middle. Add 1 egg and enough milk to form a doughy consistency. Sprinkle flour on cutting board, roll out dough, and cut into squares. Drop one square in at a time in to boiling soup allow dumpling to thicken the broth until creamy consistency. (If not making the homemade dumpling to thicken up the soup I'll use cornstarch, that's if I'm making the bisquick dumplings) There you go. Chicken and dumplings Melody style.

Norwegian pancakes recipe


All right my dears here you go

4 eggs 2 cups of ll purpose flour
2 cups of milk 1 cup of sugar...we like them sweet
1 stick of butter melted
1 to 2 drops of vanilla

Mix together well...should be thinner then normal pancake batter. Pour in skillet wait about 1 min, flip, cook then fold and your done

Foundation Tuesday

Today was an fun day. We started out with Norwegian pancakes I'll make sure to post the recipe they are so good. Then we had our lesson about about foundation first we built our pillow fort and talked about good foundation and the same with Christ, the we built our wooden helicopters and painted them. Then finished the day with Chicken and Dumplings. I promise to post recipes up soon.







Menu Monday


Monday- Chicken Lemon rice soup....(everyone in the house is a little under the weather but me :0(
Tuesday- Repeat....I made a huge pot
Wednesday- Taco's with Hobo potatoes
Thursday- Chicken and dumplings ..mmm
Friday- Hotdog and Beans...with brown bread
Saturday-Rest of Chicken and dumplings....I make huge pots of soup to last more then 1 day
Sunday-Steak, mashed potatoes, green bean casserole
Monday-Chicken Fajita's
Tuesday-Swedish meat balls with egg noodles and brown gravy
Wednesday- Farmmhouse chicken with scalloped potatoes
Thursday- Linguisa with white rice
Friday- Chicken bake w/ spaghetti
